Growing up, my family’s British heritage seemed to be very obvious, as we often had a beef roast for dinner on Sunday’s. When we visited my grandparents, we always had a beef rib roast for dinner on Sunday. I love a good prime rib beef roast, and still make one fairly regularly. I will usually smoke the roast, and rather than having horseradish to go along with it, I’ll usually make this Creamy Horseradish Sauce.
This horseradish sauce is now simply referred to as “white sauce” in my house. It is assumed that when we have roast beef that white sauce will be served with it.
Now when I grill steaks, I’ll be asked for either green sauce (Chimmcuri) or white sauce (this creamy horseradish sauce).
I don’t know the last time I finished a steak with a compound butter. Recently, the closest was likely sautéed mushrooms over the steak, and white sauce on the side.
This is a really quick and simple sauce to make. It really elevates a simple prepared horseradish to something wonderful.
