A salt free smoky barbecue chicken rub that has a slight spiciness to it. This is the rub I will usually use when I am grilling, or smoking chicken.
The chipotle powder, and smoke paprika bring a bit of smokiness to the chicken. The smokiness is enhanced when it is either smoked or grilled. The cayenne powder, and the chipotle powder add a bit of spiciness to the rub. You can be adjust the spiciness to your own tastes.
In recipes where I want to add salt to the rub, I will add four parts of this rub to one part kosher salt. I do this in recipes where I do not brine the chicken. If I have brined the chicken, then I will use this rub directly without adding any salt.
This rub doesn’t use any sugars that are usually found in off the shelf rubs, so this chicken rub is keto, or low carb diet friendly.

- 6 tablespoons smoked paprika
- 5 tablespoons onion powder
- 5 tablespoons garlic powder
- 1 tablespoon oregano
- 1 teaspoon cayenne powder
- 1 teaspoon chipolte powder
- 1 tablespoon cumin powder optional

- Mix all ingredients together.
- spread liberally over chicken before cooking.
If you do not like cumin, you can skip it, or add half the amount. The cumin can be overpowering, so only using a tablespoon of it is sufficient.
If you want a spicier rub, adding more chipotle powder, or cayenne powered will increase the spiciness.
